Fisherman friends of ours gave us some wonderful smoked black cod; actually sablefish. It is a delicacy because of it's oily richness and strong smoked flavor. It is a Norwegian specialty and the descendants of the early Norwegians here in Petersburg are holding up the tradition of smoked fish.
It is very easy to prepare, just cook the fish fillet in a little water for 5 minutes or bake it at 180C for 15 minutes.We enjoyed it with tomato salad with basil and potatoes in parsley butter.
