Grilled Pork Chops With Mustard, Honey & Sage
Ich wollte schon lange wieder mal Koteletts vom Schwein braten, aber Herr K. bemerkt mir gegenueber immer wieder, dass er kein Schwein mag, denn es sei sehr ungesund. Jaja, denke ich mir und meist bleibt es bei Schweinefilet. Als ich dieses Rezept aber gefunden habe, bei kalofagas, gab es kein zurueck. Ich habe einen Haufen Frauen eingeladen zu einem Potluck. ( Herr K. wurde ausgeladen, ich habe ihm natuerlich ein Probierstueck weggezwackt und es hat ihm ausgezeichnet gemundet, go figure!)
Originalrezept for 4 - ich hatte 10 Koteletts
2 Tbsp. of fresh sage 3 Essloeffel frischen Salbei
2 tsp. of dry oregano 4 Teeloeffel Oregano, getrocknet
1 bay leaf 2 Lorbeerblaetter
2 tsp. of whole, mixed peppercorns 4 Teeloeffel gemischte Pfefferkoerner, im Ganzen
1 tsp. coarse sea salt 2 Teeloeffel Meeressalz
4 tsp. of Dijon mustard 8 Teeloeffel smoked Senf - 2 Tbsp. honey 4 Essloeffel Honig
4 tsp. of canola/sunflower oil 3 Essloeffel Olivenoel
zest of 1/2 lemon Schale von 1 Limette, klein geschnitten
squeeze of fresh lemon juice Saft von 1/2 Limette
- Die Gewuerze in eine Schuessel geben und mit einem Loeffel zerstossen, da ich keinen Moerser habe.
- Die zerstossenen Gewuerze in ein zip-lock bag geben (kann auch von einer anderen Firma sein!) mit dem Honig, Senf, Oel, Limettenschale und -saft.
- Die Koteletts dazugeben, gut durchmischen und in den Kuehlschrank fuer mind. 1 Stunde. Bei mir waren es fast 4 Stunden. Vor dem Grillen sollten die Koteletts Raumtemperatur haben.
- Den Grill vorheizen auf mittlere Hitze, den Tip, mit der Hand fand ich sehr gut. Siehe unten Punkt 4
- Die Koteletts mit Salz und Pfeffer nachwuerzen vor dem Grillen.
- Und auf jeder Seite 4-5 Minuten grillen
- Using a mortar & pestle or dedicated coffee grinder for spices, add your sage. oregano, bay leaf, salt and peppercorns and grind into powder.
- Now empty the spice mixture into a large Zip-lock bag, along with the honey, mustard, oil, zest and lemon juice. Mix to incorporate the marinade and taste-test and adjust accordingly.
- Add your pork chops into the bag and squish the contents so that the marinade has coated all the chops. Throw in the fridge for at least at at least and hour (ideally three hours) and return to room temperature before grilling.
- Pre-heat your grill to a medium high heat (should be able to count to five when placing your hand over the heat). Brush your grill well to remove any residue and treat it by wiping some canola oil.
- Season your pork chops with some salt and a little more black pepper and place on your grill.
- Your pork chops should take 4-5 minutes per side. When the chops are done, allow to rest for a few minutes before serving.
Ich kann mir diese Marinade auch sehr gut zu Lamm vorstellen. Es waren die besten Schweinekoteletts, die ich je gegessen habe, wunderbar zart und sehr gut gewuerzt. Leider habe ich vergessen Fotos zu machen, aber das Gericht schmeckt auch ohne!
